Red onion 1, cut into wedges
Tomatoes 4, cut into wedges
Jalapeno 1, deseeded and finely chopped
Garlic 2 cloves, crushed
Cumin 2 tsp
Soy Sauce 2 tbsp
Red wine vinegar 2tbsp

In a wok heat a teaspoon of vegetable oil over high heat. Once hot add the steak strips and fry for 2 or 3 minutes until they have taken on some colour, then remove to a bowl and allow them to rest.
Add another teaspoon of oil to the wok and return to medium heat. Add the red onion wedges and cook for 3 minutes.
Next add the chopped jalapeno and cook for a further 2 minutes.
Then add the tomato wedges and crushed garlic along with another teaspoon of oil, cook for 3 minutes.
Add the cumin, soy sauce, red wine vinegar, honey and copper coriander. Stir well to combine and cook for 1 minute before reintroducing the cooked steak. Cook everything together for a final two minutes and then serve with your choice of chips, rice or both!
