Thai Noodle Salad

Serves 2

30 minutes


Ingredients


Egg noodles 125g

Bag of mixed stir fry veg 300g

Coriander small bunch

Ginger 1cm, grated

Garlic 1 clove

Soy Sauce 1 tbsp

Peanut Butter, smooth 1 tbsp

Orange 1/2, juice of

Lime 1/2, juice of

Honey 1 tbsp

Sesame Oil 1 tsp



Method


  1. Cook the noodles according to packet instructions then drain, and immediately run them under cool water to prevent them cooking any further. They should come down to room temperature.

  2. To make the sauce, in a blender combine the ginger, garlic, soy sauce, peanut butter, orange juice, lime juice, honey and sesame oil.

  3. To arrange the salad in a large bowl add the veg, and the noodles and drizzle over the sauce. Toss the bowl until it is all well combined.

  4. Eat and enjoy!
